地獄廚房美國版的劇情類似英國版，在主廚戈登·拉姆齊全權決定下，逐步從12至20個參賽選手中淘汰直到最後一位贏家成為冠軍，勝出者將會有擔任高級餐廳廚師長一職的機會。每位有抱負的廚師都是來自不同背景，所有參賽選手都會在位於洛杉磯的地獄廚房進行比賽，一開始拉姆齊要求廚師烹飪他們的招牌菜，並由拉姆齊判斷好與壞。隨後分成紅色和藍色小組，最常見的是按性別分組。餐廳內設有兩個相同的廚房，每組各用一個，每個廚房都有拉姆齊的副主廚來監督。雖然說是地獄廚房，但主廚也會給參賽者一些各種各樣的烹飪課程，包括如何煮晚宴服務中經典的義大利燉飯及威靈頓牛排。每一季賽程拉姆齊都會安排一次味覺測試，參賽者矇眼戴耳機吃下食材後必須說出食材名稱，拉姆齊認為優秀的主廚都會有天生優越的味覺。
